French Pastry: Madeleine and Financier with Chef Bridget Charters

2000 4th Ave, Seattle, WA 98121

The Hot Stove Society is continuing its successful French Pastry classes, and our next installment is on Madelines and Financier!  Both of these French treats are similar in nature and originate in different parts of France and became popular with the development of the metal French pastry molds.  Both contain butter, eggs, flour and such, but each have a slightly different technique and a different mold.

In this class Bridget and the Hot Stove team will teach you the basic rules of both small cakes, then you will roll up your sleeves and make the batter and learn to bake both types of cakes.  You will head home with a warm bundle of cakes to enjoy....if you can make it!  Like the other classes in the series, this is a fabulous class to bring your young bakers to learn, these techniques you will have for the rest of your life.  Join us!

While watching Chef Bridget demonstrate, we will serve you mushroom veloute soup and crusty bread.

What You'll Learn and Make:

  • Financier Batter and Madeline batter
  • Techniques for Genoise based batters
  • Techniques for baking Financier
