Franz JT Palentinos

Chef Instructor

Favorite Classes to Teach:

  • Pizza at Home
  • Bento Box
  • A Morning in Manila
  • Night Market
  • Paella

 Best kitchen tips:

  • Prioritize learning your stove and oven intricacies with simple dishes before trying to cook anything more complex.
  • One high quality Chef's Knife that you know how to use and take care of is an unequivocally better investment than a knife block of mediocre knives.
  • When buying knives as a gift for someone: DON'T! Instead, take them knife shopping or give them a gift certificate to a reputable knife smith! A knife should feel comfortable to use on a regular basis. Unless you intimately know someone's knife preferences, let them make the decision! The wand chooses the wizard, after all!

 Favorite Dish to Cook:

  • Hard to answer. I have ADHD so my favorite dishes to cook change more often than the moon has phases. Some days, I'm cooking the same dish on repeat for weeks on end; Others, I'm eating leftovers and cereal and reorganizing my cupboards.

Must have Pantry Item

  • A 25lb bag of jasmine rice!

To Salt or Not to Salt Your Pasta Water:

  • Yes, always and forever. Not to the level of “sea salty” but I always season water meant for cooking, whether it’s boiling noodles, poaching eggs or blanching greens!
